Budget Meals 3

So my husband just finished reading In Defense of Food, by Michael Pollan.  He now decided that he needs to eat more leaves.  So that was my theme with cooking today.  First, I made a big salad using up a lot of the produce odds and ends we had in the fridge.

Salad

We could all probably eat more salad, right?  I know I can. So I will make an effort to eat a salad I few times a week.  Plus this just looks pretty.  I usually add avocado to the top, but not until I am about to eat it.  I baked a bunch of non GMO tofu to throw on top, but you can easily add chicken as well. :)

Simple Garden Salad

3 small heads of romaine lettuce washed and chopped
1/2 yellow pepper cut in thin strips
1/2 red pepper cut in thin strips
3 small carrots cut in thin strips
1 cup cherry tomatoes
1/2 avocado sliced thin

Throw everything except the avocado in the bowl. Just before serving, place the avocado on top. Serve with your favorite dressing. I keep it simple with just a mix of olive oil and balsamic vinegar.

I also made some stir fry vegetables over buckwheat soba noodles.

Vegetables and Soba Noodles

Stir Fry Vegetables over Soba Noodles

1 pkg soba noodles (I used Eden)
1/2 red pepper sliced thin
1/2 yellow pepper sliced thin
4 cups baby spinach
2 T toasted sesame oil
1/4 cup organic soy sauce or Braggs aminos
2 T mirin
2 tsp garlic powder

Cook the soba noodles according to the instructions, drain and rinse. Heat a large sauce pan with the sesame oil and add in the peppers. Once they start to get soft, add in the spinach. It may seem like a lot, but it will cook down quite a bit. In a small bowl, mix the soy sauce and mirin. Once the spinach has cooked down, add the sauce, garlic and the soba noodles until everything looks well combined. Serve immediately or refrigerate for later.

This is what my daughter will bring to school tomorrow.

The sandwich is cream cheese, another thing she could live off of.

This is what my husband will bring to work tomorrow.  We are still eating the 3 Bean Soup.  It’s almost gone now.  I will have to find a way to make what we have left last until Saturday.  Hope I can!
